For Coating

Mix the sugar with the ground cinnamon. Cover the Simplot potatoes with the mixture made earlier and set aside.

For the Avocado Jam with Basil

Warm the agave honey, basil and Avocado Pulp over a low heat until it reaches a jam-like consistency, set aside to cool.

Assembly:

Lay a base of potatoes, then drizzle lines of Simplot avocado jam, white chocolate and chocolate sauce.
